Tasting notes

Pago de los Capellanes Reserva 2022 is a red wine like a suit from a master tailor: precise in every line, effortlessly elegant and with a calm only experience can give. On the nose it combines spiced black cherries with touches of hazelnut and mocha, in a symphony of maturity and distinction. On the palate it is firm and enveloping, with tannins that still set the pace but promise to soften gracefully. Its long, balanced finish leaves a feeling of serenity and depth, like a made-to-measure garment that reveals its perfection in the details.

Out of Pago de los capellanes Reserva

Pago de los Capellanes Reserva has become a classic of DO Ribera del Duero. It is a single-varietal Tinto Fino (Tempranillo) made by Bodega Pago de los Capellanes in Pedrosa de Duero, in the province of Burgos. The grapes come from the Pago de los Capellanes vineyard, planted on clay-limestone soils. Its low yields allow close monitoring of fruit quality. A cold pre-fermentation is carried out for 6 days at 14°C. Fermentation takes place in 20,000-litre tanks at a controlled 28°C and lasts 30 days. Malolactic fermentation follows over 28 days at 20°C. The wine is aged for 18 months in new French oak barrels, racked every 6 months, in the underground cellar 10 metres deep. After ageing it is bottled without filtering or fining. We recommend decanting it an hour before serving. Pago de los Capellanes Reserva has great ageing potential (10 years).
