La Celestina is a single-varietal red wine made from Tinto Fino, also known as Tempranillo, from DO Ribera del Duero, produced by the Dominio de Atauta winery. Dominio de Atauta is located in the village of Atauta in the province of Soria. The winery pays great attention to viticulture, understanding that high-quality wines start with meticulous care of the vineyard. The vines that produce the grapes for La Celestina are between 20 and 30 years old and grow at around 950 metres above sea level. The altitude creates a wider temperature range between day and night, helping the plant develop and contributing to balanced ripening. The climate is continental with Mediterranean influences, with long, cold winters and short, hot summers. The grapes for La Celestina were fermented in stainless steel tanks at controlled temperatures between 26 and 28°C to preserve the expression of the fruit and extract enough compounds to support the subsequent ageing. Malolactic fermentation takes place in tank, and the wine is then aged for 12–14 months in French oak barrels. 25% of the barrels are renewed every year to give the finished wine more balsamic and spicy notes. La Celestina is a refined, elegant, fresh and complex Ribera del Duero Crianza.
