Martín Códax Albariño is a white wine from DO Rías Baixas produced by Bodegas Martín Códax. It is made entirely from Albariño. The harvest follows traditional methods, and winemaking follows a rigorous, careful process to guarantee the purity of wines from Salnés. Fermentation takes place in temperature-controlled stainless steel tanks, and Martín Códax Albariño is bottled and released without any ageing. First made in 1986, the wine is named after a famous Galician troubadour whose “cantigas” still survive today; they are the oldest in the Galician-Portuguese language, and the manuscript is on display at the Morgan Library in New York. The notes of one of his cantigas decorate the corks.
