Vallegarcía Viognier is a white wine from VT Castilla made by the Pago Vallegarcía winery. As its name suggests, it is made entirely from Viognier. The grapes come from vineyards planted at 850 metres in the Montes de Toledo, within the area of influence of Cabañeros National Park. The must first undergoes pre-fermentation maceration at 8°C. Then 80% is fermented in tanks at 15°C and the remaining 20% in barrique, where the wine matures on its own lees. Finally, before release, Vallegarcía Viognier rests for 1 month in bottle to round off.
